What we are looking for
Previous experience in nigiri, sashimi, rolls and filleting fish
Proven knowledge and experience handling fish and prepping for a sushi section
Strong understanding of Japanese produce, culinary techniques, and kitchen equipment
Understanding of food and safety standards
